Grapes - Savagnin (100%)
Appearance - clear and bright, pale lemon hue.
Nose - clean, medium plus intensity youthful aromas of lime, lemon peel, green apple, pear, mineral, iodine and yeasty notes.
Palate - a dry wine with high and crisp acidity, light body and a medium alcohol level. Palate also shows medium plus intensity with the same profile of the nose mixing fresh green fruits with evident mineral stony notes, a hint of autolytic character and a long salty length.
Conclusions(16,5/20) - Very good quality, this wine can be drank now but will mellow out through the next 3 years, and probably will continue to evolve further into a more honeyed version. With a clear sense of place this is a pure mouth cleansing instrument, super fresh, tangy, crisp acidity, a lemony palate but with a nice structured body conferring it some depth. Pairing tip at "The Sampler" was Comté cheese, another typical product from the region, but I would clearly add oysters to the equation.
