Tasted January 2012 Appearance - clear and very bright color with a pale yellow straw color. Some tears and a translucid rim.
Nose - clean nose, very youthful and zesty with medium plus intensity. Shows clearly the autolytic aromas developed under the yeast film, bread dough, bitter almonds, marzipan and a slight note of sea water.
Palate - completely dry, super fresh with medium plus acidity, fortified to a medium level has a medium minus body. Pronounced flavor intensity once again mainly autolytic in character, yeasty, salty, smoky, the biter almonds also appear and a hint of green olives that is stronger towards the long length.
Conclusions (16,5/20) - Very good quality, showcases the Fino style perfectly with pungent flavors, super fresh but with a rounded mid palate that leads to a pleasing long length. A complex wine with a clear sense of place. This wine is the perfect match for tapas with a special focus on those based on Iberico Ham, Olives or dried salted fishes. Sushi could be an option too.
